Saint Patricks Day Smoothie

Since Saint Patricks day is quickly approaching I thought I would create a healthy Saint Patricks day treat. Instead of indulging in a shamrock shake or a green beer try this beautiful, clean smoothie... trust me it taste better then those unhealthy drinks anyways. It is a combination of a banana vanilla layer and a spinach kiwi layer that is sure to rock your taste buds! Enjoy!

What You'll Need: 

White Layer: 

1/2 banana

approx. 3 tbsp. vanilla yogurt

1/2 cup ice

1/4 cup almond milk + extra water if it is too thick 

Green Layer: 

1/2 banana 

1 tbsp. vanilla yogurt 

3 kiwi fruit 

handful of spinach 

approx. 1/3 cup water 

1/2 cup ice

1. Blend all white ingredients together, place to the side. 

2. Blend all green ingredients together, place to the side. Alternate between pour white portion of the smoothie and green portion of smoothie until your glass is full and voila! You have a nice clean Saint Patricks day treat.

Biceps and Triceps Workout

I not only love to eat healthy but exercise is also a large part of my daily life. I love anything from a standard gym workout, crossfit, swimming, pilates, and kickboxing as it makes me feel good and allows my body to work at its optimal level. So with this I thought I would start creating more exercise related posts to just simply allow people to see that portion of my life and maybe guide people in the right direction of incorporating more exercise into their daily activities.

Mini Halloween Shortcake

This Halloween was an extremely good one for me. My boyfriend and I dressed up as Daisy Buchanan and Jay Gatsby from The Great Gatsby and went to a Halloween party with our friends. This party was a pot luck so I opted to bring dessert, I chose to make Mini Halloween Shortcakes, and they turned out great! The recipe is the same recipe as my Gluten Free Strawberry Shortcake, so just click on the link if you want the shortcake recipe. To make them Halloween themed I dyed the dream whip orange and added Halloween sprinkles. I also wanted these desserts to be bite size so they would be more convenient to eat, so I cut them into bite size circles using a cookie cutter, then layered them. Happy Halloween!

Black Bean & Spinach Sweet Potato

This is an example of a quick, easy dinner I made for myself the other night. The ingredient list is simple and it takes no more then 20 minutes to create this dish. All of the ingredients are super easy to find and extremely healthy for you. This is a meal I will definitely make for myself again!

What You'll Need: 

sweet potato

spinach

onion

beans ( I used black beans) 

tomato

2 tsp. coconut oil ( you can use olive oil if you prefer) 

salt & pepper

All I did was put the sweet potato in the microwave to cook ( I just used the setting fresh vegetable), and cooked it until it was to my liking. While that was going on I first sauteed my onion in the coconut oil for about 10 minutes ( until soft) then added my beans, spinach and tomato, and sauteed these for about another 5 minutes. I then just put these ingredients into the sweet potato, sprinkled with some salt and pepper, and that my dinner.

Lunch: Cucumber and Turkey Sandwich

Hey! I just wanted to show a quick picture of my lunch today. I prepared myself two open faced sandwiches on gluten free bread and topped with some mustard, arugula, turkey meat, grilled garden zucchini, tomato, fresh garden cucumber and finally some feta cheese. I love sandwiches, especially when they include vegetables right from my garden!

Peanut Butter Banana Oatmeal

I just thought i'd share what I typically do with my empty peanut butter jars. I like to reuse them to put my oatmeal in the next morning, that way I get a creamy peanut butter oatmeal. On top I added some banana slices and a teaspoon of all natural maple syrup to give it a touch of sweetness. Trust me, this is a delicious way to enjoy your morning oatmeal.

My Favourite Healthy Foods!

For today's post I thought I would just share some of my favourite healthy foods. These are foods I eat basically on a daily basis or at least every few days. Eating primarily healthy does not have to be plain or boring, I do plenty of baking and dessert making while still keeping it clean and healthy, so here are some of my favourite healthy foods!

Peanut Butter/ Nut Butters- This is at the top of my list because I literally eat it every single day. Typically I eat it with yogurt, in my oatmeal or with some type of fruit but once in a while i cant help but take a big spoon full! Peanut Butter is also good for cardiovascular health, blood sugar control, anti- aging and cancer prevention.

Yogurt ( regular and greek)- A great versatile food, that i like to enjoy in my smoothies, in oatmeal, with granola and fruit, I highly recommend eating a yogurt a day, it will be beneficial to your body.

Oatmeal- This is my everyday breakfast. It is full of fibre so it keeps you full all morning and allows for creativity every morning. I like to mix mine with fruit, maybe some peanut butter, maybe some yogurt, jams, all natural maple syrup, nuts... the combinations are endless.

Bananas- MMM bananas are one of my favourite fruits. They are potassium packed, vitamin C, vitamin B-6 and fibre. I love bananas in smoothies (they work as a natural sweetener), on oats, with peanut butter, and on there own, they are a quick healthy snack!

Mangos- Another favourite fruit of mine, at my grocery store you can buy them by the crate full and thats exactly what I do. I like to eat my mangos on their own, they have such a nice flavour and texture I wouldn't want to miss it.

Sweet Potato- I am a huge fan of vegetables but this is probably my favourite of them all. They are packed with nutrients and taste great prepared the simple way, grilled on the BBQ, then topped with some salt and pepper!

Tomatoes- I have always loved tomatoes, they are a juicy vegetable that I like to enjoy on there own, in pasta sauce or on a sandwich.

Quinoa- This is an ancient naturally gluten free grain that is a staple in my home. It is high in protein,  fibre, iron, and magnesium. Typically I prepare it fairly plain, with 2 cups water to 1 cup quinoa, I add a chicken bouillon cube to the boiling water and thats it, thats all the added flavour this super food needs.

Chicken Breast- Another staple in my home, my family and I eat chicken breast basically everyday. Wether it just be with some vegetables, on a salad, in a stir fry ect. It is a tasty lean protein that I highly recommend over beef.

Coconut- I LOVE coconut! The taste, the smell, everything coconut I love. I get my unsweetened shredded coconut from my local bulk food store and use it in smoothies, on oatmeal, in yogurt, on top of fruit, in desserts and sometimes I just eat it right off the spoon. It contains plenty of healthy fats, fibre and magnesium.

Asparagus- These vegetables are also at the top of my list for favourite veggie. They contain an abundant amount of vitamins A,C,E and K , are a great antioxidant, heart health, and potassium, so eat your asparagus everyone!

Spaghetti Squash- During the summer time my mom and I eat this vegetable probably about three times a week as it grows fresh in our garden! We bake it in the oven then eat it with salt and pepper or even use it as a substitute for regular pasta noodles.

I have many more healthy foods that I eat frequently and love but these are just some of the more popular ones that came to mind.

Almond & Pumpkin Seed Bites

These Almond & Pumpkin Seed Bites are an easy snack to make and provide plenty of healthy proteins and nutritions for your body. I highly recommend them!

What You'll Need: 

1 cups dates

Just under a 1/2 cup honey 

1 tbsp. Chia Seed

1 tbsp. Flax Seed

1 cup oats ( in my first trial I used 1 1/2 cup oats and I found that to be too much so I would recommend reducing it to 1 cup)

1 1/4 cup shelled nuts or seeds ( I used almonds and pumpkin seeds)

1 cup dried cranberries

1/3 cup coconut

1. Combine dates, honey,chia seed, flax, in a food processor. Blend until smooth.

2. Place mixture in a large bowl, stir in oat, nuts or seeds, cranberries and coconut, stir until well combined. Cover and place in fridge for 30 mins.

3. Once mixture is easy to work with, shape into your desired size ball. Store in fridge for up to two weeks.
