This is an example of a quick, easy dinner I made for myself the other night. The ingredient list is simple and it takes no more then 20 minutes to create this dish. All of the ingredients are super easy to find and extremely healthy for you. This is a meal I will definitely make for myself again!
What You'll Need:
sweet potato
spinach
onion
beans ( I used black beans)
tomato
2 tsp. coconut oil ( you can use olive oil if you prefer)
salt & pepper
All I did was put the sweet potato in the microwave to cook ( I just used the setting fresh vegetable), and cooked it until it was to my liking. While that was going on I first sauteed my onion in the coconut oil for about 10 minutes ( until soft) then added my beans, spinach and tomato, and sauteed these for about another 5 minutes. I then just put these ingredients into the sweet potato, sprinkled with some salt and pepper, and that my dinner.
