Ginger Molasses Cookies

By popular demand I decided to make my family some Ginger Molasses Cookies! These are a great cookie for the holiday season and really simple to make. These cookies aren't gluten free but in the near future I will be making a gluten free cleaner version so stay tuned for that!

Ingredients:

1 cup brown sugar

3/4 cup butter

3/4 cup molasses

1 egg

1 tsp. vanilla

3 1/2 cups flour

1 tsp. baking soda

1 1/2 tsp. ground ginger

pinch of salt

2 tsp. cinnamon

1/2 tsp. ground clove

sugar, for rolling

1. With a electric beater cream together butter and brown sugar until fluffy. Add molasses, egg and vanilla, mix well.

2. In a separate bowl combine flour, ginger, cinnamon, baking soda, clove and salt, mix well.

3. Slowly mix dry ingredients into wet ingredients.

4. When dough is completely mixed together ( I recommend using your hands) cover and chill in the fridge for 15 mins.

5. Place sugar in a little bowl, roll dough into balls and roll through the sugar. Place on a baking sheet lined with parchment paper and flatten ( the dough does not expand very much while baking so however much you flatten it is how big your cookie is going to be).

6. Bake for 8 mins, the allow to cool.
