I'm a big fan of having healthy yet quick snack options on hand so these are my remake of nature valley crunchy granola bars. They are refined sugar free, vegan, gluten free and really simple to make, they're perfect! To put a little Christmas twist on them I decided to make them gingerbread flavour which was a great choice because they were delicious. So give them a try and I hope you enjoy them as much as I do!
Ingredients:
3 cuts oats
1 cup gluten free rice crispies
1/2 tsp. salt
1/2 tsp. baking soda
2 1/2 tsp. cinnamon
1 1/2 tsp. ground clove
2 1/2 tsp. nutmeg
1 1/2 tsp. ginger
1/2 cup honey
3/4 cups raw almond butter
3 1/2 tbsp. coconut oil
2 tsp. vanilla
1/2 tbsp. coconut sugar
Vanilla Drizzle:
2 tbsp. almond flour or vanilla protein powder
3 tbsp. almond milk
1/2 tsp. stevia
1/4 tsp. vanilla
1. Preheat oven to 350 F. Combine all dry ingredients ( oats, rice crispies, salt, baking soda and spices) in a large bowl. Set aside.
2. In a pot combine almond butter, honey, and coconut oil. Heat until coconut oil is melted. Take off heat and add vanilla and coconut sugar, mix well with a whisk.
3. Add wet ingredients to dry ingredients and mix well.
4. Line a 9x 13 inch baking dish with parchment paper,add granola bar mixture, press down firmly and place in oven for 20-25 mins. ( it should look golden brown when done).
5. Take out and allow to cool for 10 mins. Take our of baking dish and slice into bars when they are still slightly warm ( if you wait till they are completely cooled they are even more crumbly). Drizzle with vanilla drizzle and enjoy!
