Since I made my Skinny Pumpkin Bars in the fall I wanted to try making a Christmas version as well, and since one of my favourite christmas flavours is gingerbread I thought a Skinny Gingerbread Bar was the perfect idea. I wasn't sure how they would turn out but I thought I would give it a try and they were great! One of my favourite creations to date. They are clean, gluten free and so moist, my family loved them and they will be a treat I will be making again this holiday season.
Ingredients:
2 eggs
1 1/4 cups gluten free cake flour
1 cup almond flour
1/2 cup unsweetened apple sauce
2 tbsp. vegan butter
2 tbsp. coconut oil
2/3 tsp. baking soda
1 cup boiling water
1/2 cup molasses
2 tbsp. coconut sugar
2 tbsp. honey
1/4 cup water
2.5 tsp. baking powder
1.5 tsp. cinnamon
3 tsp. ginger
1/2-1 tsp. nutmeg
1/2 tsp. clove
Frosting:
1 tsp. vanilla
1 1/2 tbsp. almond flour
3/4 cups vanilla greek yogurt
1/4 of a 250g container of light cream cheese
3 tbsp. honey
1 tbsp. coconut sugar
stevia ( to taste)
1. Preheat oven to 350F. Combine all dry ingredients in a large bowl. Set aside.
2. In a separate bowl combine molasses, eggs, 1/4 cup water, butter, coconut oil, mix well. Add the hot water last.
3. Add wet ingredients to dry ingredients, mix well. Pour into a well greased 8x11 inch baking pan. Bake for 25-30 minutes ( until a tooth pick comes out clean).
4. While that is cooking prepare the frosting, combine all ingredients and mix well. Place on top of bars once they are fully cooled, enjoy!

ReplyDeleteI think I might give them a try - BUT my daughter is Gluten, Egg and Lactose (No dairy) intolerant. She gets blisters from eggs :(
ReplyDeleteI'm sure I can come up with some alternatives... Also I have no idea where on earth I will molasses! (lol - I;ve og tno clue what they are with the exception of Jack Nicholsas's Character saying it at some stage during 'As good as it gets' *ponders*
