These Almond & Pumpkin Seed Bites are an easy snack to make and provide plenty of healthy proteins and nutritions for your body. I highly recommend them!
What You'll Need:
1 cups dates
Just under a 1/2 cup honey
1 tbsp. Chia Seed
1 tbsp. Flax Seed
1 cup oats ( in my first trial I used 1 1/2 cup oats and I found that to be too much so I would recommend reducing it to 1 cup)
1 1/4 cup shelled nuts or seeds ( I used almonds and pumpkin seeds)
1 cup dried cranberries
1/3 cup coconut
1. Combine dates, honey,chia seed, flax, in a food processor. Blend until smooth.
2. Place mixture in a large bowl, stir in oat, nuts or seeds, cranberries and coconut, stir until well combined. Cover and place in fridge for 30 mins.
3. Once mixture is easy to work with, shape into your desired size ball. Store in fridge for up to two weeks.
