Banana "ice cream"

IMG_0872edited

I'm sure most people have seen, at least once, a beautiful picture of banana "ice cream". But, I just couldn't help myself from posting my own.

For this little treat I just blended up 3-4 frozen bananas in my food processor (you can also use a blender if your is powerful enough), topped it with some PB2 and voila! I had "ice cream"... but without all the added sugar, fat and guilt.

A great summer treat and also a great way to use bananas that are getting too ripe.

Lunch Time: Zucchini Noodles with Cottage Cheese

IMG_0854editedresized

I want to starting sharing more of my everyday life. Things that I actually eat basically everyday and not just my beautiful or more complex recipes. So I thought I would start by sharing with you my go-to lunch recently which is simply just zucchini noodles with cottage cheese. I eat this probably 3-4 times a week and it still hasn't gotten old. It is quick for me to make and packs both a nutrient and taste punch that keeps me coming back.

All that you need for this little creation is one zucchini, a julienne peeler, cottage cheese, salt and pepper. I julienne my zucchini with the peeler to create "noodles", fry them in a pan ( no oil or anything needed) for about 5 minutes until they are slightly soft. I then combine these "noodles" with some cottage cheese, salt and pepper and my lunch is ready to go. I also like to pair anything I have for lunch with a big bottle of water ( my bottle fits about 3 cups of water) to ensure I am staying properly hydrated.

I hope everyone is eating healthy, staying hydrated and enjoying the summer months ahead. What are some of your favourite go-to lunches?

Avocado Tomato Rice Cakes

Image

This is an idea for a quick yet healthy lunch creation. I like to eat this when I have left over avocado in the fridge as it is an easy way to use it up. I just take two plain cakes, top them with mashed avocado, salt and pepper, tomato and finally sprouts, simple but delicious!

What You'll Need:

2 plain rice cakes

half an avocado

salt + pepper

tomato

sprouts

Lunch: Cucumber and Turkey Sandwich

Lunch: Cucumber and Turkey Sandwich

Hey! I just wanted to show a quick picture of my lunch today. I prepared myself two open faced sandwiches on gluten free bread and topped with some mustard, arugula, turkey meat, grilled garden zucchini, tomato, fresh garden cucumber and finally some feta cheese. I love sandwiches, especially when they include vegetables right from my garden!

Summer Salad and post workout snack!

I just wanted to share with everyone what I like to enjoy as my post workout snack and my lunch for this Sunday. I believe proper nutrition, healthy meals and snacks are extremely important in order to lead the healthiest lifestyle possible.

Image

So after my workout I had a piece of my healthy, clean banana bread heated with all natural peanut butter, some banana slices and topped with PB2. Your post workout snack is extremely important as it is feeding your freshly worked muscles. For me I like my snack to contain plenty of protein and other healthy aspects.

My snack is typically, either my banana bread with peanut butter, greek yogurt with fruit and peanut butter, a trail mix, some substantial that will fuel my body.

As for lunch I prepared myself a lovely salad which included some fresh garden lettuce, grilled chicken breast strawberries, zucchini, peppers, cucumber, tomato, pumpkin seeds and topped with some feta. For a dressing I just combined some raspberry jam, rice vinegar, olive oil, salt & pepper and voila I had my lunch!

Summer Lunch: Turkey Sandwich & a Side Salad

Image

I like to include as much protein, fibre, vegetables and nutritions as I can in all my meal. So today this is my clean, healthy lunch , a turkey sandwich with a side salad. To make my sandwich I used two pieces of gluten free bread, mustard, alfalfa sprouts, tomato, spinach and roast turkey deli meat. To balance out my meal I included a side salad which had some ice burg lettuce, cherry tomato's, cucumbers, alfalfa sprouts, some feta cheese and balsamic vinaigrette as salad dressing.
