Mediterranean Baked Chicken

A few nights ago I decided to create a dish that was a bit different. I was kind of sick of your typical chicken with veggies so I did some brain storming and this Mediterranean dish is what I came up with. Not only does it look colourful and pretty but it tastes great, and incorporates plenty of nutritious ingredients. This is definitely a dish I will make again, enjoy!

What You'll Need: 

Marinade: 

Fire Roasted Tomato with Basil Kraft salad dressing

2 tbsp. granulated garlic

2 tbsp. dried oregano

approx. 5 leaf fresh basil

Bake: 

4 pieces boneless skinless chicken breast

1 container cherry tomatoes 

1/2 medium sized zucchini

1/2 yellow pepper

2 green onions

olive oil

1. Marinade chicken for at least 4 hours. 

2. When you are ready to start cooking preheat oven to 400F. Place cherry tomatoes, zucchini, and yellow peppers in baking pan, toss with olive oil and bake for about 15 mins. ( Until vegetables are almost soft) 

3. While vegetables are baking, place chicken in skillet. Cook until chicken is 3/4 way cooked and browned. 

4. Place chicken in baking pan, with vegetables and bake together, for another 7- 10 minutes, until chicken is throughly cooked. 

5. Serve with quinoa, and top with green onions and feta cheese.

  1. This looks great! Have you tried it with any other salad dressings? Do you think any Italian dressing would work?

  2. No I haven't but I'm sure any marinade of your choice would taste great! So yeah an Italian dressing would work for sure :)
