Healthier Apple Pie

Fall is in full swing! The leaves have begun to change colour and fall from the trees, which means it is apple pie season. The other day my dad came excitedly into the house and told me we had an apple tree in our front yard... we've only lived in this house for 17 years and never noticed we had an apple tree, but at least we discovered it now. So on his request I made him and my family an apple pie ( with fresh hand picked apples) for dessert on Sunday night. This pie is gluten free, and uses limited refined sugar!

What You'll Need:

Approx. 6 cups peeled and cut apples

1/3 cup stevia

1/3 cup brown sugar

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

2 tablespoons melted coconut oil

* For the pie crust I used a pre made gluten free pie crust that I purchased at  my local gluten free bakery, I'm still trying to create a perfect home made gluten free pie crust.

1. Preheat oven to 425 F . Roll out pie crust, place into greased 9-inch pie pan, press down edges with a fork.

2. Peel and chop apples, place in large bowls, mix with stevia, brown sugar, nutmeg, cinnamon, and coconut oil.

3. Place this mixture into pie crust. Top with remaining crust. For my top crust I did a lattice style, I know it is not done totally correct, if you want to see the proper technique there are plenty of great instructions on google.

4. Bake for 40-50 mins. Allow to cool for 10-15 mins before serving.
