Vegan Nut Granola Bars
What You'll Need:
12 dates, soaked
8 figs
3 tbps. melted coconut oil
1 cup oatmeal
1/2 cup quinoa flakes
1/3 cup shredded coconut
1/3 cup pumpkin seeds
2 tbps. chia seed
3 tbps. flaxseed
2 tbps. dried cranberries
cashew butter
1. Combine, dates, figs and coconut oil and a food processor, blend until it turns into a paste.
2. Combine this paste in a large bowl with oatmeal, quinoa flakes, coconut, pumpkin seeds, chia seeds, flaxseeds and dried cranberries. Mix well.
3. In a 9x9 inch baking pan, put down a base layer of cashew butter, press the granola mixture into the cashew butter. Allow to set in a freezer for 2-3 hours.
