Spiced Pear Bread with a oat & pumpkin seed streusel
I had a bunch of pears sitting on my counter about to go bad so I had to think of a creative way to use them. I thought since you use older bananas for banana bread, why not use older pears to make a spiced pear bread, so thats exactly what I did! Using pears and some other clean ingredients I came up with this recipe for a Spiced Pear Bread. It is gluten free, refined sugar free and turned about super moist, which I was excited about. This is a great way to use up aging fruit, the sweet flavour of a pear, combined with the cinnamon and nutmeg, help to create a perfect fall/winter recipe!
What You'll Need:
Spiced Pear Bread:
1 cup gluten free cake flour
1 cup oat flour
1/3 cup melted coconut oil
1 1/2 cups pear sauce ( approx. 6 pears, ground until they become a sauce in your food processor)
1/2 tsp. baking soda
1/2 tsp. baking powder
pinch of sea salt
1/2 tsp. vanilla
1 egg
1 tbsp. almond milk
2-3 tbsp. cinnamon
2-3 tsp. nutmeg
Streusel:
1/8 cup coconut oil
1/2 cup oats
1/4 cup pumpkin seeds
1 tbsp. coconut flour
1 tbsp. almond flour
1-2 tbsp. almond milk
1 tsp. stevia
1 tbsp. brown sugar or coconut sugar
1.Preheat oven to 350 F, mix all ingredients together, pour into a loaf pan.
2. Combine all ingredients together for your streusel , place on top of your spiced pear bread and bake for 45-60 minutes, until a tooth pick comes out clean!
