Cinnamon Rolls

Cinnamon rolls, a classic treat to make on a cold, snowy winter day. Even though it is officially spring, where i'm from the temperatures and still less then ideal and the snow is still falling, so cinnamon rolls were the perfect comfort food for my family and I. When I was making these I felt like I had a cinnamon roll factory in my house as I had about 5 pans worth of cinnamon rolls when all said and done. But, this shows how great these treats are because out of all those cinnamon rolls not even one remains.

Now these cinnamon rolls are not clean, healthy or gluten free, they are full of butter and sugar... just the way a cinnamon roll should be.

This recipe is truly tried and tested. I have made these cinnamon rolls a number of times and each time they have gotten better and better! To brighten my spirits and give them a spring appeal I decided to create pink and green frosting, which I think makes them look very pretty.

Ingredients:

1 package instant yeast

2 cups warm water

1/2 cup sugar

1/3 cup butter, melted

6 cups flour

2 eggs

1 cup brown sugar

1/2 - 1 cup of butter

cinnamon

Icing: 

1/2 cup butter

4 cups icing sugar

5 tbps. milk

1 tsp. vanilla

1. Combine yeast with warm water, let sit for 10 minutes. Add sugar,melted butter and 3 cups flour, mix well.

2. In a separate bowl whisk eggs together. Add to yeast mixture as well as the remaining 3 cups flour. Cover bowl and let sit for 1 hour.

3. Preheat oven to 350 F. Sprinkle counter with flour and roll out your dough. I recommend splitting the dough in two so you do not have so much to work with all at once. Top rolled dough with 1/2-1 cup melted butter, brown sugar and cinnamon.

4. Cut into approx. inch wide stripes using a pizza cutter and roll. You can either leave them at that size or cut them in half which I did.

5. Place on a baking sheet covered with parchment paper and bake for 15-17 minutes.

6. Once cooled prepare the frosting and top cinnamon rolls with it!
