Carrot Cake Energy Bites

Fall is definitely my favourite season of the year. I love the weather, the atmosphere and of course the food, so I decided it was time to start doing some fall baking. My carrot cake energy bites are the first thing I came up with. They aren't necessarily considered a baked good but they are a healthy, sweet treat that are sure to incorporate many Fall flavours. I like to eat them after a workout, as a mid afternoon snack or as a sweet treat after dinner. I hope you enjoy!

What You'll Need:

1 1/4 cup oats

1/4 cup pecans or walnuts

1/2 nut butter ( I used almond)

1/4 cup natural sweetener ( honey, agave, pure maple syrup- I used half honey half maple syrup)

1 tsp. vanilla

2 tsp. ground cinnamon

1/4 tsp. ground nutmeg

1/4 tsp. ground ginger

1 pinch ground clove

1/2 cup shredded carrots

1/4 cup raisins

1. Combine all ingredients in a bowl, mix well, roll into balls. Place in container, refrigerate for at least 1 hour.
