Blueberry Almond Muffins: Gluten, Dairy & Refined Sugar Free

Since I will be going back to class soon, I thought it would be a good idea to start thinking of recipes that are both healthy and good to eat on the go. So obviously my first recipe is for these muffins. They are 100% clean, no bad ingredients,  quick and easy to make and delicious! Enjoy!

What You'll Need: 

2 cups almond flour

2 eggs

2 egg whites

¼ cup raw honey

½ tsp. baking soda

1 tbsp. lemon juice

Dash of salt

1 tsp. vanilla extract

2 tbsp. coconut oil

1 cup (blue)berries

* Since I have buckets of garden zucchini at home I decided to throw some in so it doesn't go to waste, but that ingredient is totally optional.

1. Beat eggs and whites until frothy

2. Add all other ingredients, mix well.

3. Gently fold in berries. Fill muffin tins.

 4. Bake at 350 for 25 minutes or until golden brown.

Make 8 muffins
