Lemon Curd
For Easter I plan on making cute dessert shots and guess what flavour they are? Lemon meringue, and one of the main components of a lemon meringue dessert is the lemon curd.
This is the lemon curd I will be using to create my dessert shots. It isn't healthy or clean but it is delicious and thats what counts...especially on Easter! I hope everyone has a good Easter full of wonderful food and good company.
Ingredients:
3 lemons, zested and juiced
1/2 cup butter
4 eggs
1 1/2 cups sugar
1. Combine sugar and lemon zest in a food processor, blend until well incorporated. Add in butter and blend again until butter is fully incorporated.
2. Add in eggs one at a time, as well as the lemon juice and blend for another minute.
3. Transfer mixture to a pot, thicken on low heat, this should take approximately 10 minutes. Store in the fridge.
