Skinny Pumpkin Bars with Vanilla Creamcheese Frosting

Fall is the season of pumpkin, everywhere I go I see something pumpkin flavoured, but until this year I hated the taste of pumpkin. Even though I thought I hated it I thought why not give it one more try, so on Thanksgiving I tried my Grandmas pumpkin pie and loved it! Since this moment I decided I was going to make some sort of pumpkin dessert to get on the band wagon with pumpkin flavour trend. These bars are what I came up with, they are Skinny Pumpkin Bars, that are gluten free and fairly clean ( I don’t feel guilty about having 1 … or two for dessert). These were a huge hit in my house, they were made on Sunday and gone by Monday evening, one of my best creations yet! So I hope you try them about and enjoy them as much as I did!

What You’ll Need: 

Bars:

1 1/2 cups gluten free cake flour ( 3 cups brown rice flour, 1 cup potato starch, 1/2 cup tapioca flour, 1 1/4 tsp. xanthan gum, mix together, and you have yourself gluten free cake flour)

1/2 cup almond flour

1 tbsp. cinnamon

1 tsp. ground nutmeg

1 tsp. baking soda

1 tsp. baking powder

1/2 cup unsweetened applesauce

4 eggs

1 tsp. olive oil

2 cup pumpkin puree

tsp. vanilla

3 tbsp. brown sugar

2 tbsp. honey

stevia ( to taste, I used about 1.5 tbsp.)

Frosting: 

1 tsp. vanilla

2 tbsp. + 1 tsp. almond flour

3/4 cup 0% vanilla greek yogurt

1 container ( 250G) plain reduced fat cream cheese

1 tsp. unsweetened almond milk

3 tbsp. honey

1.5 tbsp. brown sugar

stevia to taste ( I used about 2 tbsp.)

1. Preheat oven to 350 F, swift together flour, baking soda, baking powder, cinnamon, nutmeg and almond flour.

2. In a different bowl mix together, eggs, apple sauce, olive oil, and honey.

3. Add pumpkin, brown sugar and vanilla to wet ingredients, mix until smooth.

4. Add the wet ingredients to the dry ingredients, mix throughly.

5.  Once mixture is combined, add additional stevia to ensure it is sweet enough. Grease your baking dish with cooking spray, spread batter into pan until even and smooth. Bake for 20- 25 minutes. Use a tooth pick to check that it is done.

6. While it is baking, prepare frosting, just combine all ingredients, mix well and store in fridge for the time being.

7. Once bars are cooked, allow to completely cool, then top with frosting and sprinkle with cinnamon!
