Skinny Banana Muffins
Here is another muffin recipe I love to make during the fall, as it is comforting, clean and convenient for me to take these muffins to school. They are are skinny version of a banana muffin, and are also gluten free and refined sugar free... minus a tiny bit of brown sugar, but its such a little amount it doesn't matter. So I hope you give these a try and enjoy them as much as I do.
What You'll Need:
1/2 cup coconut oil
3 egg whites
2 cups all purpose gluten free flour
1 tsp. xanthan gum
5 ripe bananas
1/8 cup honey
1/8 cup stevia
1 tsp. baking soda
1/2 oatmeal
Topping:
1/2 banana
1 tbsp. brown sugar
1/2 tbsp. stevia
* optional- 1 cup blueberries, coconut, walnuts or whatever your heart desires!
1. Preheat oven to 325 F.
2. Combine all ingredients in a bowl, mix well ( I find it easiest if I use my hands)
3. Grease muffin pan, fill muffin holders about 3/4 full.
4. Mix 1 tbsp. brown sugar and 1/2 tbsp stevia together, sprinkle on top. Slice the half banana and place in centre of muffin.
5. Bake for 40 mins, and enjoy!
