Coconut Crusted Chicken Strips

Since I have an extreme love for coconut, I decided I wanted to come up with a way that I could include it in my dinner, and these are what I came up with. Coconut crusted chicken strips, are easy, quick, healthy and provide a great summer taste!

What You'll Need: 

approx. 2 cups unsweetened shredded coconut

2 eggs

3 chicken breast

1. Cut your chicken breast into strips

2. Place 2 eggs in a bowl, mix well, place coconut in a second bowl. 

3. Dip chicken strips in egg, then transfer to coconut, coat well, place on baking sheet covered in parchment paper. Continue this till all chicken is coated. 

4. Bake in oven at 350F for about 8 mins each side.
