Mini Strawberry Cheesecakes
Due to the large amount of fresh strawberries in my house I have been creating recipes that obviously include a lot of strawberries. So yesterday I decided to make a semi clean dessert for my family and this is what I came up with... Mini Strawberry Cheesecakes!
What You'll Need:
Filling:
1/3 cup light cream cheese
3/4 cups non fat vanilla greek yogurt
1 tbsp. honey
Approx. 1/4 diced strawberries
Crust:
1 ripe banana
1 box gluten free graham crackers
Swirl/Topping:
Approx. a handful of diced strawberries
2 tbsp. honey
1. First create your crust, combine banana and graham crackers in a bowl, mold into well greased cup cake tray, bake for 10-12 mins, take out and let cool.
2. Next create your filling, combine cream cheese, greek yogurt and honey in a bowl, beat until smooth, add to your cooled, mini pie crusts. Place your desired amount of diced strawberries in the filling.
3. Allow to chill in the fridge for at least 1 hour but longer if possible
4. Create your swirl/topping by combining fresh strawberries and honey in a blender, blend until smooth.With a small spoon slowly and carefully swirl this mixture into your filling.
5. When ready to serve take out of fridge , place 1 or 2 strawberries on top for presentation, drizzle with your desired amount of topping and enjoy!
