
This is my favourite recipe for veggie burgers. It is clean, healthy and simple.
What you’ll need: Serves 4
1 can cannellini beans ( drained and rinsed)
1/2 cook quinoa
1/2 roasted & chopped peppers
2 gloves of garlic
1/2 gluten free bread crumbs
2 egg whites or 1 egg
dried basil
1/4 teaspoon paprika
half an onion finely chopped
salt & pepper
olive oil
1. In a small bowl, combine bread crumbs, a few pinches of basil, paprika, onions, and a dash of salt and pepper
2. In a larger bowl, add beans, mash with a fork. Stir in quinoa, garlic, and peppers, mix well. Add in bread crumb mix and egg whites, again mixing well. Once mixed form into 4 equal balls.

3. Press each ball into a patty, making sure the sides are pressed together so they do not fall apart. Heat a frying pan, on medium heat add a drizzle of olive oil , add veggie burgers and cook until golden on each side ( approximately 7 minutes on each side). Then enjoy :)

This is my meal. I served my white bean quinoa veggie burger on top a lettuce bowl with half a sweet potato grilled on the bbq, some bressel sprouts and a mini greek salad which contained cucumbers, cherry tomato’s, kraft greek feta salad dressing and some feta cheese. I don’t eat my burgers with a bun but of course that is always an option :) Enjoy!
